COFFEE PROCESSING

Coffee processing plays a crucial role in determining the final taste, aroma, and quality of a cup of coffee. Special processed coffee refers to coffee that undergoes unique or experimental processing methods beyond the traditional washed (wet), natural (dry), and honey processes.

Coffee cherry as a whole is naturally dried (sun-dried). Drying can take an average of 8–25 days, depending on the weather.
